FAMILY AND SCHOOL CONNECTION

A fun snow day event is going out in the yard for an activity in the snow.  Depending on the ages of your children, you can build a snowman, make a fort, have a snowball-throwing contest, go cross-country skiing, snow shoeing or make angels in the snow.  Whatever you plan to do, just have fun.  Take pleasure in the cold crisp air and beautiful snow.  Remember, wonderful times enjoying your children set a strong foundation for a connected family.  You will create memories that your children will remember throughout their lives.  

Take a picture of your snowman or whatever activity you do so you capture the moment on film to share pictures with family members who live away. 

When you're done outside, go in and make a batch of whoopie pies.  I make these once a year on a snowy winter day.  I double the recipe and freeze the extras to enjoy this treat longer. 
 

Whoopie Pies

Cream together: 

  • ½ cup shortening 
  • 1 cup sugar

  • Add: 
  • 2 eggs beaten until light colored

  • Sift together: 
  • 5 tablespoons cocoa 
  • 1 teaspoon soda
  • 2 cups sifted flour 
  • 1 teaspoon salt
  • 1 teaspoon baking powder

  • Add alternately to creamed mixture with 
  • 1 cup milk 
  • 1 teaspoon vanilla

  • Drop by teaspoonfuls onto ungreased cookie sheets.  Bake at 375 degrees for 8 – 10 minutes, depending upon the size cookies you make. 

    Cool cookies.  Then put together with the following filling and wrap each separately in waxed paper. 

    Filling
    Cream together: 

  • ½ cup shortening 
  • 3 tablespoons milk
  • 2 cups confectioners’ sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla

  • Beat shortening and fold in some of the confectioners’ sugar.  Add milk.  Add remainder of sugar and more if needed.  Add salt and vanilla.  Add more milk as necessary to make filling the right consistency.  Enjoy!
