FAMILY AND SCHOOL CONNECTION

When you and your children are cleaning out your vegetable garden this fall, look for some big zucchini to use in this great cake recipe. Don’t put them on the compost pile, instead you and your children can make this delicious chocolate zucchini cake. If you do not have a vegetable garden, go to the farm stand and buy a zucchini to use. This recipe was given to me by our school counselor, Marsha Figy-Stenstrom and it is a delicious cake!

Chocolate Zucchini Cake
½ cup Oleo ½ cup sour cream
½ cup vegetable oil 2 cup grated zucchini
1 ¾ cup sugar 2 ½ cup flour
2 eggs 4 T cocoa
1 tsp. vanilla 1 tsp. baking powder
1 tsp. soda

Mix oleo, vegetable oil and sugar. Add eggs, vanilla, sour cream and zucchini. Mix well. Then add dry ingredients and mix well again. Bake in 9 X 13 pan at 325 degrees for 45 minutes or until done. (I like to use two round cake pans and freeze one for later use.)

Caramel Frosting (for Chocolate zucchini Cake)

1 cup brown sugar packed
3 T Crisco
1 T butter
¼ cup milk
pinch salt

Boil 3 minutes. Remove and cool. Add vanilla and powdered sugar to thicken.
Add 2 T milk at a time and more powdered sugar to make more frosting.
