FAMILY AND SCHOOL CONNECTION

Now that we are back in school, an activity that a child and a parent can do together is make lunches for the following work and school day. The school hot lunch program meals are tasty and affordable, but taking his/her own lunch is a nice change of pace for a child. It also is more economical for adults to brown bag instead of buying lunch each day. In fact, I have read that a person who buys lunch out spends an average of $5.00 per day. That adds up to a lot of money over weeks, months and years.

Get family members together and make a list of fruits, snacks, desserts and sandwich fillings that people like. Choose from these lists when making lunches. By putting together sandwiches the night before, the bag lunches are easily assembled in the morning, filled with nutritious tasty food that everyone likes.

Here is a great recipe to make ahead – everyone loves to find these cookies in their lunch box!

Chocolate Crackles

4 sq. unsweetened chocolate
½ c vegetable oil
2 c. sugar
4 eggs
2 tsp. Vanilla
2 c. flour
2 tsp. Baking power
½ tsp. Salt
1 c. powdered sugar

Melt chocolate, blend with oil and sugar. Add eggs one at a time, beating after each addition. Add vanilla, flour, baking powder and salt. Mix. Chill dough several hours. Shape into small balls and roll in powdered sugar. Bake on greased cookie sheet at 350 degrees for 10-12 minutes.
