FAMILY AND SCHOOL CONNECTION

Fall is the perfect time to make salsa. If you have a garden with tomato plants, it is a delicious way to use those extra tomatoes. If you don’t have tomato plants in your garden you can buy tomatoes very inexpensively either at a farmers’ market or a farm stand.

This can make a nice family project, with all members of the family helping. Let the younger children do vegetable washing and stirring, with the parents dicing and chopping. Older children can help with measuring and squeezing the limes.

If you have young children, a wonderful book to go along with this theme is Red Are the Apples authored by Marc Harshman and Cheryl Ryan. This book is great to read aloud with your children.

The salsa makes a great gift for your family and friends, as it is very tasty! Make a batch of tacos and serve them with your fresh, homemade salsa, and everyone will say, “Cha-Cha-Cha!

  Salsa ~ Ah Cha Cha

3 large tomatoes diced & seeded (peel if you wish)
2 T olive oil or 1-28oz can Contadina crushed tomatoes
1 salsa pepper seeded & diced (or one small can of green chilies)
½ medium onion finely diced 2 T olive oil
juice of 1 lemon or lime 1 t dried cilantro or 1 T chopped fresh cilantro
splash of vinegar (I use white or red wine vinegar)
salt and pepper to taste
1 ½ t of chili powder (optional)

  • Mix all ingredients and chill before serving. Enjoy!
