Family and School Connection- Spring 2005

Spring is always a busy time as we prepare for and participate in graduations, weddings and other gatherings with our families and friends.  It can be difficult to find time to prepare dishes to bring to so many events. 

   I have found that salads are a simple, tasty and nutritious addition to just about any 
spring or summer party.

Making salads is a fun, hands on activity for children as it allows them the opportunity to choose what ingredients to use. 

Here is a quick and very tasty salad recipe that is a favorite of my family.


 
Spring Salad

   1        head of red leaf lettuce
   3oz    feta cheese
   1/4 c  pistachio nuts
   1         small red onion sliced
   1/4 c  craisins (dried cranberries)
   1/4 c  canola oil
             juice from one lemon

Wash lettuce. Tear or cut into small pieces and place in a large salad bowl.  Crumble feta cheese and sprinkle over the lettuce along with the pistachios, onion slices and craisins. Combine the lemon juice and canola oil and drizzle over the salad.  Toss to thoroughly coat all of the ingredients with the dressing.  Salt and pepper to taste. Serve with a  hearty sandwich (chicken, tuna, seafood, grilled chicken) or with a nice loaf of french bread.   Enjoy!
