I have found that salads are a simple, tasty and nutritious addition to
just about any
Making salads is a fun, hands on activity for children as it allows them the opportunity to choose what ingredients to use. Here is a quick and very tasty salad recipe that is a favorite of my family. |

1 head of red leaf lettuce
Wash
lettuce. Tear or cut into small pieces and place in a large salad bowl.
Crumble feta cheese and sprinkle over the lettuce along with the pistachios,
onion slices and craisins. Combine the lemon juice and canola oil and drizzle
over the salad. Toss to thoroughly coat all of the ingredients with
the dressing. Salt and pepper to taste. Serve with a hearty
sandwich (chicken, tuna, seafood, grilled chicken) or with a nice loaf
of french bread. Enjoy!
