FAMILY AND SCHOOL CONNECTION

I grew up as part of a big family.  In the winter, we usually played outside.  We enjoyed skiing, sliding, games in the snow and our favorite, ice-skating.  On Sunday afternoon, our entire family often went skating.  Many families gathered at the Lily Pond, which was a favorite skating location for winter fun.  We all sat down in a long row on a cold log and put our skates on.  Our fingers surely got cold while we pulled our lacings as tightly as we could.  It was a race to see who could get onto the ice first.  We skated all afternoon playing relay games, hockey and just skating arm-in-arm.  When we got cold, we could skate over to the roaring fire that would always be burning when a group gathered to skate.  We warmed our icy toes and fingers and then skated off for more fun.

When we were all tired and worn out, we piled into the old station wagon and headed home for popcorn and fudge which was a family tradition on Sunday nights.  My father would pop the corn in a big kettle on the stove while my mother made the fudge.  How tantalizing those smells were to us as we waited for our treats.  This is the fudge recipe that my mother often used.  She taught us all how to make fudge and I still really enjoy making it today.  In fact, my son Mark makes this recipe often and he can make a better batch of fudge than me!
 

Peanut Butter Fudge

1 cup granulated sugar
1 cup brown sugar
¼ cup butter
½ cup milk
1 cup creamy or crunchy peanut butter
3 tablespoons marshmallow crème
1 teaspoon vanilla

In a heavy 2-quart saucepan combine sugar, butter or margarine and milk.  Stirring constantly, bring to a rolling boil over medium heat.  Cook, stirring, for 3 minutes.

Remove from heat.  Stir in peanut butter, marshmallow crème and vanilla; mix well.  Pour mixture into a buttered 8-inch square pan.  Cool.  Cut into squares.  Makes 25 pieces.
