FAMILY AND SCHOOL CONNECTION
by Mrs. Chamberlin
Principal of Lura Libby and Cushing Community Schools

A great project for a family to do together is to plant a vegetable or flower garden.
What a nice feeling of satisfaction you get working on a project that you get such a nice reward from – either food to harvest or flowers to cut for arrangements.
There is nothing more fulfilling than to be out in the warm sunshine working and plaything together in the garden planting and then weeding.

Rhubarb is a very easy fruit to grow.  You can dig up a section of the plant, since it transplants very easily, plant it and you will get rhubarb stalks to harvest the next year.
Here is a great recipe that your family can make up.  It is delicious.  I often add some fresh strawberries to it, which makes it extra special.

RHUBARB CRUNCH

  • Mix until crumbly:
  •
    1 c sifted flour
    ½ c melted butter
    ¾ c oatmeal
    1 tsp. cinnamon
    1 c brown sugar
  • Press half of the crumb mixture in a 9-inch square pan.
  • Cover with 4 cups chopped rhubarb.
  • Combine:
  •
    1c sugar
    1 c water
    2 tbls. cornstarch
    1 tsp. vanilla
  • Cook until thick and clear.
  • Pour over rhubarb and top with remaining crumbs.
  • Bake 1 hour at 350° F.
  • Top with whipped cream or vanilla ice cream.
  • This type of special Friday night fun is bound to bring your family closer together.
