Banana Bread 

Ingredients: 

  • 5 cups sliced bananas 
  • 2/3 cup canola oil 
  • 3/4 cup maple syrup 
  • 2 cups whole-wheat pastry flour 
  • 2 cups white flour 
  • 1 teaspoon salt 
  • 2 teaspoons baking powder 
  • 2 teaspoons baking soda 
  • 1 teaspoon ground allspice 
  • pinch ground cardamom 
To make: 
  1. Preheat oven to 375 degrees.  Oil two 9x5 inch loaf pans. 
  2. In a large bowl, mash bananas well with a pastry blender. 
  3. Stir oil and syrup into bananas.  Mix well. 
  4. In another bowl, mix together all the dry ingredients. 
  5. Add the dry mixture to the banana mixture and stir until well blended.
  6. Pour batter into the prepared pans and bake for 40-50 minutes or until
  7. a tester inserted in the center comes out clean. 
  8. Let cool for 20 minutes in pan on a wire rack.  Slice and serve. 
Makes two loaves. 

Preparation time: 30 minutes 
Baking time: 40-50 minutes 
Cooling time: 20 minutes
