Blueberry Muffins 

Ingredients: 

  • 1 cup all-purpose flour 
  • 1/2 cup whole wheat flour 
  • 2 teaspoons baking powder 
  • 1/2 teaspoon salt 
  • 1 beaten egg 
  • 1/2 cup milk 
  • 1/2 cup honey 
  • 1/4 cup cooking oil 
  • 1/2 cup blueberries - fresh or frozen 
To make: 
  • Stir together dry ingredients; make a well in the center. 
  • Combine liquid ingredients.  Add all at once to dry ingredients stirring until just moistened.  Batter should be lumpy. 
  • Carefully fold in blueberries. 
  • Grease muffin cups or line with paper bake cups; fill 2/3 full. 
  • Bake in a 375 degree oven about 20 minutes. 
Makes 12 muffins
