Cool Carrot Corn Bread 

Ingredients: 

  •   1 ½ cups unbleached white flour 
  •   1 cup whole wheat pastry flour 
  •   1 ½ cups corn meal 
  •   ½cup raw sugar 
  •   4 teaspoons baking powder 
  •   1 teaspoon salt 
  •   2 cups milk 
  •   ½ cup oil 
  •   2 eggs, beaten 
  •   1 cup finely grated carrot 
  •   1 tablespoon poppy seeds 
To make: 
  •   Preheat oven to 400degrees. 
  •   Grease a 9” x 13” baking pan. 
  •   Combine milk, eggs, and oil in a small bowl. 
  •   Stir the dry ingredients together in a large bowl. 
  •   Mix together the wet and dry ingredients. 
  •   Turn the batter out into the greased pan and spread it smooth. 
  •   Bake for 20-25 minutes in a 400-degree oven. 
  •   Cut into squares and serve.
