Gingerbread

Ingredients: 

  • 1/2 cup soft or melted butter 
  • 3/4 cup blackstrap molasses 
  • 3/4 cup honey 
  • 1 egg 
  • 1 2/3 cup buttermilk 
  • 3 3/4 cup whole wheat flour 
  • 1 1/2 teaspoon baking soda 
  • 1 1/2 teaspoon cinnamon 
  • 3 teaspoons (or 1 Tablespoon) powdered ginger 
  • 3/4 teaspoons salt 
To make:
  • Preheat oven to 350 degrees. 
  • Grease a 9” x 13” baking pan. 
  • In a bowl, mix butter, molasses, and honey. 
  • Beat in egg.  Stir in buttermilk. 
  • Sift the dry ingredients into another bowl. 
  • Mix together the wet and dry ingredients. 
  • Turn the batter out into the greased pan and  spread it smooth. 
  • Bake for 40 minutes in a 350 degree oven. 
  • Cut into squares and serve.
