| Jumbles
Ingredients:

½ cup dried pitted dates or apricots

Fruit juice to cover fruit

½ cup oil
-
4 cups whole wheat pastry flour

1 tablespoon cinnamon

1 teaspoon ground ginger
-
½ teaspoon salt
-
3 tablespoons carob powder
-
2 teaspoons vanilla
To make:

Preheat oven to 325 degrees.

Soak fruit in juice until soft. Drain and squeeze out moisture.
Reserve juice and dice fruit.

Combine oil and sweetener.

Combine dry ingredients.

Add fruit to flour mixture.
-
Combine wet mixture with dry mixture, add vanilla and enough reserved juice
to form a thick batter.

Drop rounded spoonfuls of mixture onto a baking sheet and bake 15-20 minutes
or until edges are lightly browned.

Cool on a wire rack.
Serve with juice for “J” week! |
