Jumbles 

Ingredients: 

  • ½ cup dried pitted dates or apricots 
  • Fruit juice to cover fruit 
  • ½ cup oil 
  • 4 cups whole wheat pastry flour 
  • 1 tablespoon cinnamon 
  • 1 teaspoon ground ginger 
  • ½ teaspoon salt 
  • 3 tablespoons carob powder 
  • 2 teaspoons vanilla 
To make: 
  • Preheat oven to 325 degrees. 
  • Soak fruit in juice until soft.  Drain and squeeze out moisture.  Reserve juice and dice fruit. 
  • Combine oil and sweetener. 
  • Combine dry ingredients. 
  • Add fruit to flour mixture. 
  • Combine wet mixture with dry mixture, add vanilla and enough reserved juice to form a thick batter. 
  • Drop rounded spoonfuls of mixture onto a baking sheet and bake 15-20 minutes or until edges are lightly browned. 
  • Cool on a wire rack. 
Serve with juice for “J” week!
