Latkes 

Ingredients: 

  • 2 cups potatoes, peeled 
  • 1 small onion, grated 
  • 1tsp salt 
  • 1/4 tsp pepper 
  • 1 tbs flour 
  • 1/2 tsp baking powder 
  • 2 eggs, beaten 
To make: 
  • Soak potatoes in cold water for one hour. 
  • Drain and grate potatoes. 
  • In a large bowl, combine potatoes, onion, salt and pepper. Mix well. 
  • Add eggs. Mix well. 
  • Drop mixture by teaspoonsfuls into a well-greased frying pan over medium heat. 
  • Spread out with the back of a spoon. 
  • Cook until brown on one side. Flip over and brown on other side. 
Makes about 15.
