| Latkes
Ingredients:

2 cups potatoes, peeled

1 small onion, grated

1tsp salt

1/4 tsp pepper

1 tbs flour

1/2 tsp baking powder

2 eggs, beaten
To make:

Soak potatoes in cold water for one hour.

Drain and grate potatoes.

In a large bowl, combine potatoes, onion, salt and pepper. Mix well.

Add eggs. Mix well.

Drop mixture by teaspoonsfuls into a well-greased frying pan over medium
heat.

Spread out with the back of a spoon.

Cook until brown on one side. Flip over and brown on other side.
Makes about 15. |
