Light Wheat Dough
(used in making Soft Golden Pretzels)
Ingredients:

2 tablespoons honey

2 tablespoons baking yeast

2 cups warm water

1 tablespoon cooking oil

2 cups whole wheat bread flour

4 cups all purpose unbleached flour

1 teaspoon salt
To make:

Combine the honey, yeast, and water and let sit for a few moments.
The mixture should get bubbly—this shows that your yeast is happy and healthy!

Add oil to yeast mixture.

In a separate bowl, combine flours and salt.

Make a well in the center of the dry ingredients, and pour in the liquids.

Stir, then knead to make the dough smooth and elastic.

Place dough in an oiled bowl or zipper-bag and let rise one hour in a warm
place or over night in the refrigerator.

Shape and bake dough as desired.
Makes enough dough for 32 medium pretzels or 4 medium/small pizza
crusts or 3 loaves of bread.
