| Pumpkin Muffins
Ingredients:

1½ cups all-purpose flour

3 cups whole wheat flour

2 tablespoons baking powder

1 teaspoon salt

1 ½ teaspoons cinnamon

1 ½ teaspoons nutmeg

3 beaten eggs
-
1 ½ cups milk
-
1 cup honey
-
¾ cups cooking oil
-
1 ½ cups pumpkin (canned or fresh cooked and pureed)
To make:

Stir together dry ingredients; make a well in the center.

Combine liquid ingredients. Add all at once to dry ingredients stirring
until just moistened. Batter should be lumpy.

Carefully fold in pumpkin.

Grease muffin cups or line with paper bake cups; fill 2/3 full.

Bake in a 375-degree oven about 20 minutes.
