Quick Quiche
Ingredients:
Crust: Filling:
· 2 1/4 cups all purpose flour · 1 dozen eggs
· 1 teaspoon salt · 1 1/2 cups milk
· 1/2 cup cooking oil · 1 teaspoon salt
· 6 tablespoons cold milk · 1 cup shredded cheese5 cups
sliced bananas
Filling:
· 1 dozen eggs
· 1 1/2 cups milk
· 1 teaspoon salt
· 1 cup shredded cheese
To Make:
1. Preheat oven to 450 degrees.
2. Make the crust first. Combine the flour and salt in a large bowl.
3. Measure cooking oil and 6 tablespoons of milk into a 2-cup measure.
Do not stir.
4. Add milk and oil all at once to the flour mixture and stir with
a fork until all the flour is moistened.
5. Knead just a few turns…until the dough forms a ball.
6. Roll out the dough between two pieces of plastic wrap to make a
9”x13” rectangle. (Or close enough!)
7. Place the crust in the bottom of a 9”x13” pan. Pat
in place so that the bottom is completely covered. (See note above!

8. Bake the crust for 5 minutes.
9. Crack the eggs into the large bowl.
10. Add the milk and salt to the eggs. Mix until it is all one color.
11. Sprinkle the cheese evenly over the pre-baked crust.
12. Pour the egg mixture on top of the cheese.
13. Place the pan in the oven and reduce the heat to 350 degrees.
14. Bake for about 30 minutes or until the eggs are set.
15. Cool 10 minutes (if time permits) before cutting into small rectangles
for serving.
