| Raisin Rolls
Ingredients:

1 ½ tablespoon baking yeast

1 cup warm water

1 teaspoon honey
-
1 stick butter (you can cut this in half with good results)

1 large spoonful of honey

3 cups hot water

1-½ teaspoons salt

About 10 cups flour (half white, half whole wheat)

Raisins
-
Cinnamon
-
Optional mix-ins: millet, sun flour seeds, oatmeal, chopped nuts
To make:

Pre-heat oven to 350 degrees and grease three cookie sheets.

Stir the teaspoon of honey into the warm water in a small bowl. Sprinkle
the yeast on top then, softening a few minutes, then stirring and setting
aside.

Combine butter remaining honey and hot water. When cool enough to
hold you finger in for a count of 10, add yeast and stir in about half
the flour. This is the sponge. Set it aside to rest about 15
minutes.

Stir in enough flour and optional mix-ins to make a soft dough.

Bread off egg sized pieces of dough and shape into rolls. Add a touch
of cinnamon and some raisins as you form them.

Bake for about 30 minutes until just barely brown. Enjoy!
