Raisin Rolls 

Ingredients: 

  • 1 ½ tablespoon baking yeast 
  • 1 cup warm water 
  • 1 teaspoon honey 
  • 1 stick butter (you can cut this in half with good results) 
  • 1 large spoonful of honey 
  • 3 cups hot water 
  • 1-½ teaspoons salt 
  • About 10 cups flour (half white, half whole wheat) 
  • Raisins 
  • Cinnamon 
  • Optional mix-ins: millet, sun flour seeds, oatmeal, chopped nuts 
To make: 
  • Pre-heat oven to 350 degrees and grease three cookie sheets. 
  • Stir the teaspoon of honey into the warm water in a small bowl.  Sprinkle the yeast on top then, softening a few minutes, then stirring and setting aside. 
  • Combine butter remaining honey and hot water.  When cool enough to hold you finger in for a count of 10, add yeast and stir in about half the flour.  This is the sponge.  Set it aside to rest about 15 minutes. 
  • Stir in enough flour and optional mix-ins to make a soft dough. 
  • Bread off egg sized pieces of dough and shape into rolls.  Add a touch of cinnamon and some raisins as you form them. 
  • Bake for about 30 minutes until just barely brown.  Enjoy!
