| Two Terribly Tasty Tarts
Shell ingredients:

2 ½ cups whole wheat pastry flour

½ cups rice flour (or additional whole wheat pastry flour)

½ teaspoon cinnamon

¼ teaspoon salt
-
¼ cup maple syrup
-
½ cup oil
-
2 to 4 tablespoons water
To make:

Preheat oven to 350 degrees.

Mix together all dry ingredients.

Combine wet ingredients using smaller amount of water.

Slowly add liquids to dry ingredients, stirring until ball forms.
Press together and divide in two pieces.

Roll each half into a large circle. Transfer to an oiled baking sheet,
then form sides about 1 inch high.

Pre-bake for 10 minutes.
Filling ingredients:

10 cooking apples
-
1 teaspoon cinnamon
-
¼ cup maple syrup
-
Butter to sauté
-
Chopped walnuts
To make:
-
Peel, core and slice apples.
-
Toss with cinnamon and syrup.
-
Sauté half of apples in butter until almost soft.
-
Place sautéed apples in the bottom of each tart shell.
-
Artfully arrange remaining apples in an overlapping pattern.
-
Bake for 30 minutes. Sprinkle with chopped nuts in last ten minutes
of baking.
