Two Terribly Tasty Tarts 

Shell ingredients: 

  • 2 ½ cups whole wheat pastry flour 
  • ½ cups rice flour (or additional whole wheat pastry flour) 
  • ½ teaspoon cinnamon 
  • ¼ teaspoon salt 
  • ¼ cup maple syrup 
  • ½ cup oil 
  • 2 to 4 tablespoons water 
To make:
  • Preheat oven to 350 degrees. 
  • Mix together all dry ingredients. 
  • Combine wet ingredients using smaller amount of water. 
  • Slowly add liquids to dry ingredients, stirring until ball forms.  Press together and divide in two pieces. 
  • Roll each half into a large circle.  Transfer to an oiled baking sheet, then form sides about 1 inch high. 
  • Pre-bake for 10 minutes. 
Filling ingredients:
  • 10 cooking apples 
  • 1 teaspoon cinnamon 
  • ¼ cup maple syrup 
  • Butter to sauté 
  • Chopped walnuts 
To make: 
  • Peel, core and slice apples. 
  • Toss with cinnamon and syrup. 
  • Sauté half of apples in butter until almost soft. 
  • Place sautéed apples in the bottom of each tart shell. 
  • Artfully arrange remaining apples in an overlapping pattern. 
  • Bake for 30 minutes.  Sprinkle with chopped nuts in last ten minutes of baking.
