| Tortillas by Hand
Ingredients:

1 cup unbleached white flour, plus extra for rolling the dough

1/4 teaspoon salt

1/2 cup water
-
Extras for the filling (you choose):

A spoonful or two of refried beans for each serving

A handful or two of grated Monterey jack or cheddar
-
cheese for each serving

Salsa (as much as you like)
To make:

Measure 1 cup flour and put it in a medium-large bowl.

Measure 1/4 teaspoon salt. Sprinkle it ito the flour and stir a little.

Make a dent in the center with a spoon.

Measure 1/2 cup wate and pour it into the dent.

Mix with a fork or spoon for about 1 minute, then rub some flour into the
palms of your clean hands and use your hands to push the dough together
until it becomes a smooth ball.

Sprinkle a little flour onto the work area. Put the dough on the floured
area and divide it into 4 equal parts. Roll each part into a smaller ball.

Rub a little flour on the rolling pin. roll each pall until it becomes
a very thin, flat circle about 6 or 7 inches across. You can measure it.
Put a frying pan on the stove and place a tortilla in the pan.Turn on the
heat to

medium.

Cook on one side for 3 or 4 minutes, until it has golden brown spots underneath.
(Use a spatula to peek.)

When the tortilla is ready, flip it over, and cook it on the other side.
If you want to eat it plain, just wait until it has golden brown spots
on the second side and it’s done! If you want to fill it, go to the next
step.

To make filled tortillas you can add:

a spoonful or two of beans, spread into place

a handful or two of cheese
-
a little salsa

Put fillings on half of the circle.

Use the spatula to fold over the plain half to cover the filling.

Cook the tortilla for a little longer, until the cheese melts. Use a spatula
to lift it out of the pan and put in on a plate.
Makes 4 tortillas.
