| Wonderful Waffles
Ingredients:
3 ½ cups whole wheat pastry flour
2 tablespoons baking powder
1 teaspoon salt
4 egg yolks
3 ½ cups milk
1 cup oil or melted butter
4 egg whites
To make:

Mix dry ingredients in a large bowl.

In a small bowl, lightly whisk egg yolks. Beat in milk and oil.

Add to flour mixture all at once. Stir mixture until blended, but
still slightly lumpy.

In another bowl, beat egg whites until stiff peaks form.

Gently fold egg whites into flour and milk mixture, leaving a few fluffs
of egg white. Do not over mix.

Pour about 1/3 of batter onto a waffle iron and cook until rapid steaming
stops.

Serve at once with your favorite toppings or keep warm in a single layer
on a rack atop a baking sheet in the oven.
Makes about 20 smallish waffles. |
