CCS Kindergarten Recipe

Wonderful Waffles 

Ingredients: 

3 ½ cups whole wheat pastry flour 
2 tablespoons baking powder 
1 teaspoon salt 
4 egg yolks 
3 ½ cups milk 
1 cup oil or melted butter 
4 egg whites 
To make: 
  • Mix dry ingredients in a large bowl. 
  • In a small bowl, lightly whisk egg yolks.  Beat in milk and oil. 
  • Add to flour mixture all at once.  Stir mixture until blended, but still slightly lumpy. 
  • In another bowl, beat egg whites until stiff peaks form. 
  • Gently fold egg whites into flour and milk mixture, leaving a few fluffs of egg white.  Do not over mix. 
  • Pour about 1/3 of batter onto a waffle iron and cook until rapid steaming stops. 
  • Serve at once with your favorite toppings or keep warm in a single layer on a rack atop a baking sheet in the oven. 
Makes about 20 smallish waffles.
