| Yeast Rolls (Very Easy Bread Recipe)
Sprinkle 1 1/2 tablespoons dry yeast in a cup of warm water with a dollop of honey. Put in a warm place to rise. Put a stick of butter, a large wooden spoonful of honey and 1 tablespoon of salt in a large bowl. Pour 3 cups of warm milk over the butter, honey and salt. When cool enough to hold finger in for count of 10, add yeast. Sift in 8-10 cups flour (1/2 whole wheat, 1/2 white), stirring with wooden spoon to make a sponge. The children love to make it "snow" into the bowl! Other "secret ingredients" you can add are cinnamon, sunflower seeds, millet, raisins, oats, rye, nuts, etc. Cover with a "blanket" and set in warm place to rest for 10-15 minutes. Add enough flour to make it kneadable. Put a little flour on the table and give a small piece of dough to your child. Keep the big part yourself so it will be well kneaded. As you knead, you can sing: This is the way we push the dough,
After you have kneaded the dough for 5 or 10 minutes and it seems very smooth and elastic, gather it together and form into rolls. Place rolls on an oiled baking sheet. If you have time, you could let them rise a little longer on the pan, covered. Bake at 350 degrees for about 20 minutes, or until light brown. That's all there is to it. Serve warm with butter and tea! Here's another rhyme to try while you're kneading the dough: Pat-a-cake, pat-a-cake, baker's man
