Zucchini Muffins 

Ingredients: 

  • 2 grated zucchinis 
  • 1½ cups all-purpose flour 
  • 3 cups whole wheat flour 
  • 2 tablespoons baking powder 
  • 1 teaspoon salt 
  • 1 ½ teaspoon cinnamon 
  • 3 beaten egg 
  • 1 ½ cup milk 
  • 1 cup honey 
  • ¾ cup cooking oil 
To make: 
  • Grate zucchini ands set aside. 
  • Stir together dry ingredients; make a well in the center. 
  • Combine liquid ingredients.  Add all at once to dry ingredients stirring until just moistened.  Batter should be lumpy. 
  • Carefully fold in zucchini. 
  • Grease muffin cups or line with paper bake cups; fill 2/3 full. 
  • Bake in a 375-degree oven about 20 minutes. 
Makes 30-36.
