| Preheat oven to 400 |
| Mix together: 1 3/4
cup flour
1/3 cup sugar 2 teas. baking powder 3/4 teas. salt |
| Beat 2 eggs in a separate bowl |
| Combine and add: 1/4
melted butter
3/4 cup milk |
| Mix all of the ingredients together |
| Fold into the batter 1 cup of blueberries lightly floured and 1 teas. of lemon rind |
| Pour batter into muffin tins |
| Cook for 20-25 minutes |
| Makes an even dozen |
