Children progress through these stages as letters and the sounds they make begin to have more meaning for them.  No matter what stage your child is in they will be able to read you their story.  If your child asks you to write down words for them to copy that is fine to do.  It will benefit them to see the conventional spelling and also to see the letter forms.
